Butternut Squash and Spinach Lasagna Recipe

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 1 tablespoon of olive oil
  • Salt and pepper, to taste
  • 9 lasagna noodles
  • 4 cups of fresh spinach
  • 2 cups of ricotta cheese
  • 1 cup of grated Parmesan cheese
  • 2 cups of shredded mozzarella cheese
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of nutmeg
  • 2 cups of marinara sauce

Instructions:

  1. Preheat the oven: Set your oven to 375°F (190°C).
  2. Roast the squash: Combine the cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25-30 minutes until it’s soft and slightly caramelized.
  3. Prepare the noodles: Cook the lasagna noodles as per the instructions on the package. Once done, drain and keep aside.
